Instructions
Take a
8oz ramekin
. Add washed spinach leaves and cherry tomatoes to it.
Crack in two eggs. Season the eggs with salt and pepper. Add milk & shredded cheese on top.
Bake at 375F/ 190C for 10 min. If you like a runnier yolk, bake it for 8 minutes.
Notes
I used a toaster oven so it didn't require me to preheat, however, if you're using a regular oven make sure you preheat it first.
You can use mozzarella, cheddar or parmesan. I used the Mexican cheese blend which consisted of monterey jack, queso asadero and cheddar cheese.
