10 Min Baked Eggs

Ingredients
  

  • 2 eggs
  • 1 handful baby spinach
  • 5 - 6 cherry tomatoes cut into halves
  • 1 tbsp milk or heavy cream
  • 1 tbsp cheese shredded
  • 1 pinch salt or as per taste
  • 1 pinch black pepper

Instructions
 

  • Take a 8oz ramekin. Add washed spinach leaves and cherry tomatoes to it.
  • Crack in two eggs. Season the eggs with salt and pepper. Add milk & shredded cheese on top.
  • Bake at 375F/ 190C for 10 min. If you like a runnier yolk, bake it for 8 minutes.

Notes

  • I used a toaster oven so it didn't require me to preheat, however, if you're using a regular oven make sure you preheat it first.
  • You can use mozzarella, cheddar or parmesan. I used the Mexican cheese blend which consisted of monterey jack, queso asadero and cheddar cheese.
