You need to make these easy spicy ramen noodles– they’re quick to make, ready in just 10 minutes, bursting with flavor, and very cheap. These noodles are perfect for a quick dinner or late night meal and you can adjust them according to your taste!
The first time I made this recipe, I was very busy with work and didn’t have a lot of time to eat lunch, forget making it. That’s when this recipe came in handy for me. It only requires a few basic ingredients and 10 minutes of your time. And yes, that includes the cutting & chopping time as well. These chili garlic noodles are also a college student favorite because of how budget friendly they are. It sums up to roughly $2 for a portion of these. Can it get any better than that?!
I kept it simple here. However, you can feel free to throw in any protein of your choice to bulk it up. I love having these alongside jammy eggs. Some people have tried it with fried eggs and they seem to be obsessed with it. You can also add any vegetables you have in your fridge such as mushrooms, spinach, etc.
Ingredients Required
Ramen Noodles: You can use any kind of ramen noodles. Since this recipe is so focused on being cheap & accessible, I used instant ramen, specifically the maruchan ramen in chicken flavor. You won’t be using the seasoning packet that comes with the instant noodles so the flavor doesn’t really matter.
Soy Sauce: The recipe uses regular soy sauce. Avoid using dark soy sauce but if you must, use 1.5 to 2 tablespoons only because you don’t want the noodles to be too salty.
Brown Sugar/ Honey: Using a sweetener is key to the sweet and spicy sauce. You may also use white sugar or maple syrup instead.
Water: Use room temperature water for the sauce.
Oil: I used olive oil in this recipe but it works well with basically any unflavored vegetable oil. Sesame & Avocado oil work really well with this recipe.
Garlic, Green Onions/ Scallions: Fresh garlic cloves provide a better flavor but pre-packaged minced garlic works just as well. For the sauce, we only need to saute the white/ light green part of the green onions with the garlic.
Red Chilli Flakes/ Red Pepper Flakes: This is the key ingredient to make these ramen noodles hot and spicy.
Sesame Seeds: Finally, garnish the noodles along with sesame seeds and the green part of green onions.
How to make Spicy Ramen
Cook Ramen Noodles: Bring a pot of water to a boil and cook them as per the package instructions. I boiled them for 3 minutes. Be sure not to overcook them to avoid making a mushy mess.
Soy Sauce Mixture: In a bowl, mix soy sauce, water, and brown sugar. We will use this mixture to create the sauce for the noodles.
Saute: Heat the olive oil in a nonstick pan or a wok. Saute the white/ light green part of the green onion/ scallions, minced garlic cloves, and red pepper flakes.
Prepare the Sauce: Add the soy sauce mixture to the pan. Cook on a medium flame until the sauce gets thick.
Combine: Add the cooked ramen noodles to the sauce. Gently combine them making sure all the noodles are coated with the flavorful sauce.
Simmer: Let the noodles simmer in the chili garlic sauce for a minute or two. This will allow the noodles to soak up all the flavor.
Garnish: Sprinkle some sesame seeds on top followed by the chopped green parts of the green onions/ scallions. Then, serve.
Spicy Ramen Noodles

- 1 pack ramen noodles (3oz or 85g)
- 2.5 tablespoon soy sauce
- 1 teaspoon brown sugar or honey or to taste
- 1/4 cup water
- 3 tablespoon olive oil or avocado oil
- 4 to 5 cloves of garlic minced
- 3 tablespoon scallions/ green onion white/ light green part
- 1 to 2 tablespoon red chili flakes adjust to taste
- 1/4 teaspoon sesame seeds to garnish
- 1 tablespoon scallions/ green onion green part
Instructions
- Bring a pot of water to a boil, add a package of ramen noodles. Discard the ramen seasoning.
- Cook as per package instructions. I used maruchan ramen noodles which took me 3 minutes.
- In a bowl, mix soy sauce, brown sugar & water. Set aside.
- Heat olive oil in a pan, add garlic, the white part of the green onion, red chili flakes and saute them for a minute or until golden brown.
- Then, add the soy sauce mixture. Cook on medium flame for 2 minutes or until the sauce is reduced.
- Combine the cooked ramen noodles with the sauce and simmer for 2 minutes so the noodles are perfectly coated with the sauce.
- Garnish with chopped green part of the green onions and sesame seeds.

Notes
- Adjust the heat as per your taste by changing the amount of red chili flakes used. 1.5 tablespoons of red chili is the perfect amount of spice kick while 2 tablespoons is super spicy for me.
- You may want to adjust the amount of brown sugar if you’re altering the amount of red chili flakes. The lesser red chili flakes you use, the lesser the brown sugar. If you don’t like it too sweet, just use 1/2 teaspoon of brown sugar instead.
- Do not overcook the noodles because we will cook them with the sauce too and don’t want a mushy mess.
