I tried these potato buns right before Diwali because my mom wanted me to serve something other than usual sweets to the guests. The first time I made these potato rolls or potato buns, whatever you want to refer them as I made them using all purpose flour and I will insert a picture down below for that too.
My mom wanted me to try them with whole wheat flour because it is healthier. So, the next time I tried replacing the flour with whole wheat flour and it was a success again! My point here is that you can bake these potato buns anyway you like, use whole wheat flour or all-purpose flour, they would still be yummy. But, there’s a thing, if you use all purpose flour, they’ll be more scrumptious just like the normal white bread tastes better than the brown bread.

These potato rolls take no time to bake and are delicious. This potato bun recipe is so simple, it’s just the proofing that takes time. Other than that, your effort in this is minimal. I hope you like this recipe. Later, on Diwali, I actually changed the stuffing from potatoes and peas to paneer and capsicum and trust me, they were the real game changers. I will post the paneer buns recipe soon too. Stay tuned for that.

Ingredients: (Serves: 8 buns)
For the dough:
- Whole wheat flour- 1+1/2 cups
- Milk- 1/4 cup (lukewarm) + 2 tbsp (for brushing)
- Water- 1/4 cup + 2 tbsp (more if needed only)
- Active dry yeast- 3/4 tsp
- Powdered sugar- 1 tbsp
- Salt- 3/4 tsp
- Oil- 1+1/2 tbsp + 1 tbsp (for brushing)
For the stuffing:
- Potato- 2 (boiled and chopped)
- Onion- 1 (chopped)
- Cumin seeds- 1 tsp
- Coriander powder- 1/2 tsp
- Red chilli powder- 1/2 tsp
- Turmeric powder- 1/4 tsp
- Green peas- 1/2 cup (boiled)
- Salt- as needed
- Oil- 1 tbsp
- Cheese- 2 tbsp (finely grated)
Instructions to prepare the whole wheat potato buns:
- Take lukewarm milk, dissolve sugar in it. Then, add in active dry yeast and stir it well until the yeast dissolves. Let the mixture sit for 10 minutes or until it is frothy.
- Meanwhile, take a huge bowl, add in whole wheat flour and salt. Mix them well. Then, start making a well in the middle of the flour and salt mixture.
- Add in oil in the well. Then, take the frothy yeast mixture and give it a little stir. Add the yeast mixture in the well we created.
- Mix all the ingredients with a spoon to form a nice dough. Now start adding water, little by little. Don’t add all the water at once. Add a little, mix the dough and add more if needed only.
- Once you form a smooth dough, smoothen the top with your hands and tightly cover the bowl with a cling film and keep it in a warm place for 1 hour.
- Until then, let’s make the filling. Take a pan, add in oil and cumin seeds. Fry the cumin seeds, then add in onions and saute them too. Then, add in red chilli and coriander powder and mix well.
- After that, add in chopped potatoes and mash them a little while mixing. Finally, add in green peas and salt. Cook for a minute and your filling is done. Let it cool.
- After 1 hour, the dough will be double in size. Take off the cling film and punch the dough so that the air trapped in it, escapes.
- Knead the dough for a minute. Then start making round balls out of it. Keep the balls on a baking tray covered with aluminium foil and greased with oil.
- After you’ve made the balls, cover them with cling film and let them rest for 30 minutes.
- After 30 minutes, the balls would’ve risen. Take off the cling film. Take one ball and make a dent from the lower side with the help of a tablespoon. Add 1 tbsp of filling in the dent and top it off with some cheese. Pinch the dough together to form a perfect round bun.
- When you’re done filling all the buns, brush them generously with milk. Cover it with cling film and let it rest. Then, preheat the oven at 220C.
- After the oven is preheated, take off the cling film and bake them for 20 to 25 minutes or until they’re golden brown on the top.
- Once they’re baked, take them out immediately and brush them with oil. Serve them warm with some ketchup.
