White Sauce Pasta Without Flour, How to Make Pasta in White Sauce

Hey everyone! I present another pasta recipe today. White sauce pasta is a really simple to make and extremely delicious. This is a white sauce pasta and you might be wondering that there is already one in this blog so why on earth am I posting the same recipe again. I do have a white sauce pasta recipe on my blog, but that one is the one with the flour in it; the white sauce is made up of flour but in this recipe the white sauce doesn’t contain flour. Not completely healthy, but kind of better than that one.

So a friend of mine asked me how to make white sauce pasta without flour so the other day when I was making some for lunch, I though it’d be good to add it on the blog as well. The white sauce we create in this recipe is cheesy, creamy, yummy and rich even though it doesn’t include flour.

This creamy white sauce pasta tastes amazing. I have tried this so many times and this recipe works like a charm each time. Also, I believe that most people love white sauce pasta more than the red pasta or any other pasta.

In this white sauce pasta recipe, I haven’t added any vegetables other than onions and garlic. You can add more vegetables like capsicum/ bell peppers, cherry tomatoes, carrots, corn kernels etc.
Adding cheese in this recipe depends on you, you can add more or less as you feel. It would be creamier if you add more cheese and less creamy if you add lesser, of course. This recipe is the perfect white sauce pasta recipe if you’re looking for one where you don’t have to use flour/ maida in the white sauce. I hope you enjoy this step by step recipe and the video that I’ve added below.

Ingredients:

  • Pasta- 1 cup
  • Milk- 1/2 cup
  • Cream- 2 tbsp
  • Mozzarella Cheese- 1/2 cup grated
  • Butter- 1 tbsp
  • Chopped Garlic- 1 tbsp
  • Julienned Onion- 1/2 cup
  • Salt- 1/2 tsp
  • Black Pepper- 1/2 tsp
  • Oregano/ Italian Seasoning- 1 tsp
  • Water- 2 + 1/2 cups (for boiling)
  • Olive oil- 1 tsp
  • Coriander/ Parsley- for garnishing


Recipe for White Sauce Pasta:

  1. Add in pasta, water, a pinch of salt and olive oil in the pan and boil the pasta for about 5 minutes covered with a lid. Then, open the lid a bit so that the steam escapes. Then, let it boil for another 10 minutes or until the pasta is soft.
  2. Strain the pasta and wash it with cold water to remove the excess starch. 
  3. Take a pan, add in butter. Then, add in garlic to the melted butter and fry it. After that, add in onions and fry them until they are golden pinkish in colour. Then, add in milk and keep stirring until the milk condenses.
  4. Now, add in 1/4 cup of grated cheese and stir until the cheese melts. At this point, add in the boiled pasta and stir well so that the pasta combines with the sauce. 
  5. Then, add in cream and 1/4 cup of grated cheese. Mix well and add in the salt and black pepper. Sprinkle some oregano and garnish the pasta with coriander/ parsley.

    Hello Harshita, Once I tried to make a milk based creamy sauce, but the milk began to curdle, I had heat set to very low; still overheated the sauce! Have you experienced this sometimes, any tips regarding keeping milk or cream for curdle or separation in the pan, thx for the recipe, KK

    -Try using whole fat milk instead of low fat or skim milk (this would most probably solve your problem)
    -Make sure the heat is on the lowest before you add milk
    -Stir it constantly while cooking
    -Don't cook it for more than 2 min and add the pasta
