Watermelon Granita Recipe- Easy Summer Recipes

April has just started and it is already so hot where I live. But, I am not mad at this because I LOVE SUMMERS! How can one not love summers? Watermelons, mangoes, summer drinks, swimming- these are the reasons why I love this season. Plus, who can forget summer vacation? The longest holidays of the year. The moment I tasted this granita, I was like “Now, it’s officially summer!”

This is one refreshing recipe, unlike the ice creams, this is not something you’ll be guilty of later. You can have lots of these and enjoy the season without regretting about the calories you gained. A cup of diced watermelon which is 200 grams, has 60 calories in it, and after adding the sugar, it would be approximately 108 calories which I think is so much better than a having a scoop of chocolate ice cream.

This recipe serves two, but if you’re a person like me who will eat both the servings, then it’ll be a gain of 216 calories :-D

Things you’ll need:

  • Watermelon (chopped & seedless)- 2 cups
  • Lemon juice- 1/2 tbsp
  • Granulated sugar- 2 tbsp
  • Fresh mint leaves- for garnish
  • Tiny watermelon slices- for garnish

Method:

  • Take the chopped watermelon pieces in a blender, add the lemon juice and sugar.
  • Blend in everything. After it forms a smooth puree, pour it in a container.
  • Freeze it for 6 hours or overnight.
  • After it is frozen, scrape it with the help of a fork an serve it with few mint leaves on the top and a tiny slice of cold watermelon.
Note: This must be consumed immediately after scraping, otherwise you’ll be left with watermelon juice.
Enjoy the summer!
