This is a good breakfast/ lunch option for vegans. These tortilla roll ups are filled with fresh vegetables, creamy sauce with a hint of tanginess and are straight out of the refrigerator.
If you’re not a vegan, you could use any tortilla and any cheese you prefer but vegans would have to use vegan tortilla and vegan cheese. But, if you don’t get the vegan cheese easily, feel free to skip it. The roll ups would taste amazing even without it.
Ingredients:
- Tortilla – 1
- Mayonnaise- 2 tbsp
- Mint mayonnaise- 1 tbsp
- Lemon juice- 1 tsp
- Cumin seed powder- 1/4 tsp
- Paprika/ Red chilli powder – 1/4 tsp (according to the spiciness you prefer – read the notes)
- Lettuce- 4 to 5 leaves
- Green bell pepper- 2 tbsp (finely sliced)
- Red bell pepper- 2 tbsp (finely sliced)
- Onion- 2 tbsp (finely sliced)
- Cherry tomatoes- 3 to 4 (cut into halves)
- Olives- 6 to 7
- Mozzarella cheese- 1.5 tbsp
- Oregano/ Italian seasoning- 1 tsp
Method:
- Take a bowl, add in mayonnaise, mint mayonnaise, lemon juice, cumin seed powder, paprika and mix well to form a smooth sauce.
- Spread the sauce over a tortilla and add in lettuce, green and red bell pepper, onion, cherry tomatoes and olives.
- After that, spread some mozzarella cheese over the vegetables and finally spread the toppings all over the tortilla. Sprinkle some oregano/ italian seasoning on the top.
- Take a plate and spread plastic wrap/ cling film over it and then transfer the tortilla covered with toppings over it and roll it. Cover the rolled tortilla tightly with another cling film and let it chill in the refrigerator for 30 to 40 minutes.
- Serve chilled.
Notes (Must Read):
- Red chilli powder is a lot more spicy than paprika. Paprika hardly has any spiciness so add whatever suits your taste.
- Do not overfill the tortilla with excessive toppings because then it would be hard to roll the tortilla and the filling would come out.
- Do not add salt to it because the italian seasoning and cheese already has some salt in it and you don’t want to add more.
- If you don’t have vegan cheese, you can eliminate that and instead, add in some tofu or simply not add anything. Also, you would have to add in some salt if you add tofu since it is bland.
