Am back with another pasta recipe. This is actually a pasta salad recipe with tofu in it. Yes, haven’t heard of tofu pasta salad before?! Even I didn’t. I had some tofu in my fridge so added some tofu cubes to this pasta salad.

Made this a while ago but posting it now because I’ve been a bit busy lately with my exams. Two of ’em are over now, but still 3 more to go and then some practical exams. Huh! But, in between all this, I do take out some time to make stuff and click pictures to post the recipe on here.

Till then, let me describe this pasta salad. If you haven’t had a tofu pasta salad, this should be on your foods to try list! And, for people who love pasta, this won’t disappoint you for sure. This pasta salad recipe is creamy, salty and has a tinge of sourness- a citrusy flavour. I used a flavoured tofu but a plain one would be good as well. This recipe would go for a good dinner starters/ get together snacks.

Ingredients:

  • Pasta- 1 cup
  • Tofu- 10 to 12 cubes
  • Mayonnaise- 3 tbsp
  • Plain yoghurt/ curd- 2 tbsp
  • Salt and pepper- according to taste
  • Thin sliced vegetables- carrots and capsicum
  • Finely chopped garlic- 4 to 5 cloves
  • Olive oil- 1 tbsp
  • Oregano- for enhancing the taste
  • Lemon juice- 1/2 tbsp
  • Tomato ketchup- 1+1/2 tbsp

Recipe for the Tofu pasta salad:

  • Take the pasta. Boil it for 15 to 20 minutes or until it is all cooked and soft to chew.
  • Drain the pasta and wash it with cold water to remove excess fat. Keep it aside. Allow it to cool for approximately 30 minutes before preparing the salad.
  • Take a pan, add olive oil and heat it for 30 seconds, then add in the finely chopped garlic cloves, carrots and capsicum.
  • Saute them until the vegetables start to appear bright in colour and switch off the flame. Let the vegetables cool for about 10 to 15 minutes. Then, add in mayonnaise and curd.
  • Add salt and pepper. Also, add the tomato ketchup to it. Then, add in the pasta and mix everything well. Sprinkle some oregano.
  • Add the tofu cubes and mix them with the pasta.
  • Now, add the lemon juice and and mix the pasta well together.
  • The pasta is ready to be served. You may even chill it in fridge for some time before serving.
