I made these for dinner because I had some leftover plain rice from lunch. I wanted to make Thai curry rice but then I dropped that idea because that would’ve been too much work and this was much more simple. I am not much fond of fried rice but I prefer them over the normal dal- roti combo. It is not the classic Chinese fried recipe, this is something I like to make. It’s modified according to my taste. But, I assure you this will turn out tasty. I will very soon post the classic Chinese fried rice recipe too.

I didn’t have much vegetables left in the refrigerator so I added whatever I had, because I like my rice or noodles with a lot of vegetables. I somewhat like stir fried vegetables a lot.They are super yum and of course, healthy too! Now, I’m going a bit off topic, so let me start the recipe 🙂
Ingredients: (Serves : 1)
- Plain cooked rice
- Finely chopped garlic cloves- 4
- Chopped mushrooms- 1/4 cup
- Chopped onion- 1/4 cup
- Chopped zucchini- 1/4 cup
- Boiled sweet corns- 1/4 cup
- Olive oil/ vegetable oil- 4 tbsp
- Vinegar- 1 tbsp
- Red chili powder- as per taste ( I prefer 1/4 tsp)
- Soya sauce- 2 tbsp
- Salt & black pepper- as per taste
- Tomato ketchup- 3 tbsp (optional)
Recipe for the fried rice:
- Take some olive oil in a pan and heat it for a bit. Then, add the chopped garlic and saute until it is golden, then add the chopped onion and saute them until golden brown.
- After that, add all the vegetables left in it and saute them on low flame until they’re bright in colour.
- Add salt and pepper, red chili powder, soya sauce, vinegar and tomato ketchup. Mix everything well.
- Then, the plain pre cooked rice and mix all the ingredients well.
- Cook everything together for about 2 more minutes on low flame.
- After that, your stir fried vegetable rice are ready to be served!
