Rava Kesari Recipe

This is the easiest sweet recipe I guess. It was fabulous! It taste almost like the Sooji Halwa but its shape, colour and texture makes it a little different. I liked it do much.

Well, I made this an after lunch recipe because I like to have a sweet daily after every meal. It is easy to make if guests arrive without any notice! They will definitely be amazed by your creativity and you will get compliments. 🙂
I saw this recipe at Raks Kitchen and I was drooling by then.
Getting compliments feels very nice……I have experienced this a lot many times 😀 And, it was so great to have it! It tastes great at room temperature but you can warm it for 10 seconds in the microwave and it will taste awesome!!! 😀

Prep Time: 5 min   Cook Time: 15 min

Makes: 16 burfis

Ingredients:

Rava/ Sooji/ Semolina- 1/4 cup
Sugar- 1/2 cup
Water- 3/4 cup
Cardamom- 4 to 5
Ghee/ Clarified Butter- 2 tbsp
Kesari/ Orange Food Colour- 1 tsp

Method:

  1. Take a saucepan and heat the ghee in it. Add sooji/ semolina to it and on low flame, stir it and then cover it with a lid/ plate for a minute or two.
  2. Then, add water to it. Switch the flame to high now.Once it starts leaving sides and is light golden brown, add the sugar. The sugar will caramelize. Stir it well and grind the cardamom and add it next.
  3. Add food colour and stir well. After a minute of stirring, switch off the flame.
  4. Take a plate greased with ghee. Add the cooked rava kesari on it and flatten it. Keep it in room temperature to cool and set for 20 to 30 minutes. After it is set, cut it in the shape of a burfi.
