This quick & cheesy tomato pasta is my go to pasta recipe which requires no time to prepare. I used farfalle pasta but if you wanna fasten up the process of cooking even more, I recommend using macaroni. Other than that, you can also use fusilli or penne pasta.
I have added no vegetables in this pasta recipe but you can add capsicum, mushrooms and basil leaves if you like. Just sauté the chopped basil leaves, capsicum and mushroom with the onions.
You can reduce the amount of cheese or eliminate it at all too. Just customize this pasta as you want, although this is the simplest version. If you try it out, send me your pictures on facebook or instagram, like always.
Ingredients:
- Pasta- 2 cups or 200g (I used farfalle)
- Tomatoes- 2 large (finely chopped)
- Onion-1 large (chopped)
- Garlic cloves- 5 to 6 (finely chopped)
- Pizza/ pasta sauce- 4 tbsp
- Tomato ketchup- 2 tbsp
- Cheese- 1/2 cup (grated)
- Olive oil- 1 tbsp
- Salt- as per taste
- Oregano- 1 tsp
- Red chilli powder- 1/2 tsp
- Black pepper powder- 1 tsp
Method to prepare quick, cheesy tomato pasta:
- Bowl the pasta and keep aside.
- Take a pan, add in oil and heat it. Add garlic and sauté it; then add in onions and sauté them until translucent in colour. Then, add in chopped tomatoes.
- Stir the tomatoes and then let then cook on medium heat. After they start losing water, add some salt and stir them.
- Cover them and cook for 5 to 7 minutes covered on low to medium flame until all the water is evaporated. Then, add red chilli powder and oregano. Mix well.
- Add pasta/ pizza sauce and mix well again. Finally, add in the boiled pasta and stir well.
- Then, add grated cheese and give it a stir so that the cheese melts. After that, add some black pepper powder and mix.
- Add some more cheese on the top (Optional).
- Serve hot.
