Perfect Moist Banana Bread Recipe using 1 Egg & 1 Banana

Moist, soft, sweet & delicious! Who doesn’t love a slice of banana bread?
Well, my mum doesn’t. She’s allergic to bananas. 

I have been making this banana bread recipe for the last 4 years now and it comes out to be so scrumptious every time. It’s such an easy to follow recipe and doesn’t require a lot of ingredients either. It is possibly the best banana bread recipe that I’ve tried so far.

What I love about banana breads is the fact that they require overripe bananas and let’s be honest bananas go bad so quick once you buy them and it is annoying to finish them all at once so what better way to use those extremely overripe mushy bananas than to make a good old loaf of delicious banana bread? I think you’re convinced at this point so I am gonna stop trying to sell it to you and talk a little more about the actual recipe itself haha.

The Best Banana Bread Recipe

I basically adapted this recipe from allrecipes. I changed a couple of things in the recipe & it worked out perfectly. All you really need is flour, sugar, an egg, a banana, baking soda, cinnamon, vanilla, salt, and butter for this recipe. Now, those are the like the most basic ingredients ever and I am pretty sure each one of you has those at home. 
The best part about this bread is the buttery soft yet kind of stiff crust. The butter coating really pays off- it tastes so so good. Seriously, do not skip that step. Be generous with the butter. This bread goes so well with tea and coffee and is perfect for a little tea party. 

Ingredients for Banana Bread Recipe:

  • 1/4 cup softened butter **(check notes)
  • 1/2 cup granulated white sugar **(check notes)
  • 1 egg
  • 1 overripe banana
  • 3/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp cinnamon powder
  • 1/4 tsp vanilla extract

Instructions to make Banana Bread:

  1. Preheat your oven to 350F/ 175C.
  2. Take softened butter in a bowl and whisk it until it’s pale. Then, add sugar and cream them together. Next, add egg and whisk it, followed by the banana. Mix all these ingredients well.
  3. Add all-purpose flour, baking soda, cinnamon, and salt in it next. Combine everything and add vanilla extract. Fold the batter until smooth.
  4. Bake for 40- 50 minutes at 350F/ 175C or until the top of the bread is golden brown and it’s fully cooked in the center. Insert a skewer in the middle to check if it’s fully cooked. If not, bake it for another 5 minutes or so.
  5. Once it is fully baked, take it out of the oven immediately and spread a generous amount of butter on the top. Let it cool at room temperature for at least 30 minutes before slicing. Enjoy!

Notes:

  • You may use either- salted or unsalted butter, unlike popular opinion it doesn’t really matter. It wouldn’t make or break the recipe. I used salted butter here.
  • You may use powdered sugar instead of granulated sugar. 
  • If you like, you can add some chocolate chips or walnuts on the top before baking the bread, I didn’t because I wanted a smooth crust.
