Quesadillas are tortillas stuffed with cheese, some vegetables or meat and then grilled. I have made this a few times now and it comes out so delicious. You can customize it according to your liking and it would still be great!
This is very easy to make if you have store bought or pre-made tortillas ready with you. For a simple recipe, this tastes amazing. You could add and subtract vegetables and maybe add more cheese. I added very little cheese on one and a lot more on the other because the first was for my mom and the second one was for me. You get it now, right? 😉
Ingredients: (Serves: 2)
- Tortilla- 4
- Cottage cheese/ paneer- 1/2 cup (cubed)
- Red bell pepper- 1/4 cup (julienned)
- Green bell pepper- 1/4 cup (julienned)
- Red onions- 1/4 cup (julienned)
- Olives- 12 to 14
- Olive oil- 1 tbsp
- Pizza sauce- 1 tbsp + 1 tsp
- Grated cheese- 1/4 cup or more
- Salt- 1tsp or as per taste
- Red chilli powder- 1/2 tsp
- Dried cumin powder- 1/2 tsp
- Lemon juice- 1 tsp
- Mayonnaise- 2 tbsp
- Tomato ketchup- 2 tsp
- Oregano- 1 tsp
Method:
- Take a pan, heat it a little and add in oil. Then, add in onions and saute them until they turn transparent. Then add in the red and green bell peppers and stir them too. After that add in olives and stir fry all the vegetables.
- Then, add in 1/2 tsp salt, red chilli powder and mix everything well.
- Add in cottage cheese cubes, pizza sauce and 1/2 tsp of salt, cumin powder and stir for a minute or two. Your filling is ready, keep it aside.
- Now, take a bowl, add in mayonnaise, lemon juice, oregano, and tomato ketchup. Mix well.
- Take the tortillas and spread the sauce we created, then add some filling on the top and finish it up with some grated cheese on the top of the filling. Cover it with another tortilla to form a quesadilla.
- Heat a pan and spread some oil over it. Place the quesadilla and toast it until it’s golden brown on both the sides. One side should take about a minute and a half or two on medium flame.
- Serve it hot with some ketchup or as it is. Tastes great either ways!
