These no bake oreo filled chocolate muffins are a true oreo/ chocolate lover’s delight! They are super easy to prepare and can be made on a stove. These muffins came out soft, moist with bits of almost melted oreo chunks in the centre. These vanished in 24 hours or lesser, I think.
I have been eagerly waiting to get a new OTG. But, it isn’t that easy when you do not earn, right? I have to wait for my parents to get me one. But, till then, I thought of trying a no bake muffin recipe. I have heard of this one before, but this is the first time I tried it. I tried two batches and each one came out perfectly.
Makes: 8 small muffins
Ingredients:
- Flour- 3/4 cup
- Powdered sugar- 1/2 cup
- Oil- 1/4 cup
- Water at room temperature- 1/2 cup
- Cocoa powder- 3 tbsp
- Oreo cookies- 8 to 10
- Lemon juice/ vinegar – 1 tsp
- Baking powder- 1/2 tsp
- Vanilla essence- 1 tsp
- Salt- 1/4 tsp
Instructions to Prepare Steamed Oreo Muffins:
- In a bowl, add in sugar, oil, vanilla essence and water. Whisk everything until well combined. Then, add in lemon juice and mix well.
- Then take a sieve and sift in flour, baking powder, cocoa powder and salt.
- Whisk everything well until a smooth batter is formed. Then add in little chunks of oreo cookies and fold them in with a spatula.
- Take a pan, add in 1.5 to 2 cups of water and heat it for 8 to 10 min on medium flame with the pan covered with a lid to preheat it.
- Meanwhile, fill in the cupcake moulds with the batter. Only fill in 3/4th of the mould because the cupcakes will eventually rise.
- Finally, place the cupcake moulds filled with batter on a plate.
- Remove the lid from pan with water, place a wire rack in the water and on the rack, place the plate with our cupcake moulds. Cover the pan with the lid and let the cupcakes steam for 20 to 25 minutes over a low- medium flame.
- Mine were fully baked in 22 minutes. You can check if they’re done or not, by inserting a toothpick or a knife in the middle.
- Turn off the flame and let them sit in the pan with the lid for 10 to 15 minutes. After they’re cooled, top them off with some icing sugar and serve.
Note
Do not remove the lid of the pan too many times because that can lead to uneven tops of the muffins.
