Here is some Indian style vegetarian macaroni.  I love this recipe, it tastes so good and is simple to make. As I always say, I love pasta but that day (the day I made this Indian style pasta), I did not want to eat the regular Italian white/ red pasta. So, I tried this recipe and it came out so good!

Ingredients: (Serves: 2)

  • Water- 2 cups
  • Macaroni- 1 cup
  • Olive oil- 1 tbsp + 1/2 tsp
  • Salt- 1 +1/2 tsp 
  • Red Chilli Powder- 1 tsp
  • Black pepper powder- 1/2 tsp
  • Turmeric powder- 1/2 tsp
  • Garlic cloves- 4 to 5 chopped
  • Onion- 1/2 medium sized chopped
  • Tomato- 1 medium sized chopped
  • Capsicum- 1/2 medium sized chopped
  • Green peas- 1/2 cup
  • Tomato ketchup- 4 tbsp (adjust according to taste)
  • Oregano- 1 tsp

Method to make Indian Styled Macaroni:

  • Take some water in a pan, add in the macaroni, 1/2 tsp salt and 1/2 tsp oil. Stir everything well and then place a wooden spatula over the pan (this avoids the water from spilling). Then, boil the macaroni for 5 to 7 minutes until it is fully cooked and soft to chew.
  • Then, strain the water from the macaroni and keep the macaroni aside.
  • In the same pan, take 1 tbsp of olive or any vegetable oil, heat it for a few seconds and then add in chopped garlic. Sauté it until it turns translucent in colour. Then, add in onions and sauté them until they turn translucent too.
  • After that, add in chopped capsicum and sauté until it becomes bright in colour. Then add in chopped tomatoes and cook until the water from the tomatoes starts to separate. 
  • Once most of the water evaporates, add in green peas, stir it a little, add in 1/2 tsp of salt, red chilli powder, black pepper, turmeric powder and cook them for 3 to 4 minutes.
  • Then, add in tomato ketchup and stir everything well. Now, add in the remaining 1/2 tsp of salt and red chilli powder. Stir it.
  • Add in the boiled macaroni and mix it well so that it’s coated with the spices and the sauce. Finally add in a tsp of oregano/ italian seasoning and mix it well with the macaroni.
  • Serve hot.
