These pancakes are the best pancakes I’ve ever tried. I have experimented with a lot of different pancake recipes but this pancake recipe makes some of the fluffiest and lightest pancakes in no time.
These pancakes are soft and moist but also very fluffy. You probably already have all the ingredients required to make these light and fluffy pancakes at your kitchen. Ingredients for the fluffy pancakes:
- All purpose flour- 1 cup or 150g
- Powdered sugar- 1/4 cup or 60g
- Baking powder- 1 heapead tsp
- Egg- 1
- Vanilla extract- 1/2 tsp
- Milk- 3/4 cup
- Butter- optional (to grease the pan)
Method to prepare the fluffiest pancakes ever:
- Take a bowl- crack in an egg and beat it. Then, add in 6 tbsp milk and vanilla extract. Whisk it until light and fluffy- for 5 minutes. Keep it aside.
- Take a separate bowl- sift in sugar, flour and baking powder. Mix them together.
- Now add the dry ingredients in the wet ingredients in batches of 3 to 4. Gently mix them. Add in 1/4 cup of milk and mix the batter again. You only want the dry and wet ingredients to incorporate well so DO NOT whisk them, just gently stir them in. Some lumps in the batter are alright.
- Let the batter rest for 15 to 20 minutes.
- Take a pan, let it heat. Smear some butter, pour in 1/4 cup of batter. Once it starts bubbling, flip it. Cook for a 45 to 60 seconds and it’s done.
- Do not add any butter if you want a smooth and all brown texture on the pancakes.
- Serve the hot cakes with maple syrup and butter. You can also serve the fluffy pancakes with fresh fruits and whipped cream.
