Sweet, buttery soft, melt in your mouth vegan pancakes with a hint of cinnamon… Yes, please!
Super Easy Vegan Pancakes
I woke up today in the mood to eat something sweet for breakfast and the first thing that came to my mind was some nice fluffy pancakes. I decided to make some vegan pancakes and no, pancakes do not need eggs to be fluffy- baking powder does the trick too.
Fluffy Vegan Pancakes
These are the perfect addition to your weekend family brunch. Soft, sweet, fluffy, airy and most importantly, so delicious that you would find it hard to resist.
I have made my fair share of pancakes and tried tonnes of vegan and non-vegan recipes and let me tell you this recipe is not left behind any of those recipes (both flavour & texture-wise) with eggs in it. You may add vanilla in it but to keep it really simple and basic, I decided not to add that and instead added cinnamon. Also, because cinnamon is my favorite spice ever, like seriously, I add it in any and every sweet recipe I make.
I stuck to the basics with this vegan pancakes recipe & mostly everyone has these ingredients at home- super basic and easy.
How to make these vegan cinnamon pancakes?
Combine all the dry ingredients- flour, sugar, baking powder, salt, and cinnamon in a bowl. Whisk them a little. I added cinnamon in the end but it really doesn’t matter when you add it- just don’t skip it, please. It wouldn’t ruin the recipe but you will surely be missing out if you don’t.
Then go ahead and add your favorite non-dairy milk. I used oat milk because that’s what I had in my fridge. You can use any milk that you prefer.
Add the rest of the ingredients & combine them.
The pancakes come out super fluffy if the batter looks like this- thoroughly combined but not too smooth. A few lumps are fine, don’t overmix it.
Cook on low to medium flame until bubbles appear & then flip the pancake. Repeat for however many pancakes you want.
Serving: 4 medium-sized pancakes/ 6 tiny pancakes
Ingredients:
- 3/4 cup all-purpose flour
- 3/4 tsp baking powder
- a pinch of salt
- 1/4 tsp cinnamon
- 1.5 tbsp sugar
- 1.5 tbsp olive oil
- 3/4 cup oat milk (any non-dairy milk works here)
- vegan butter (for frying the pancake)
Recipe to make Vegan Cinnamon Pancakes:
- First, in a bowl combine flour, sugar, baking powder, cinnamon, and salt. Then, add oil and milk. Mix well until everything is combined. You don’t need to get the batter to be super smooth, in fact, avoid over mixing- mix it to a point where it’s just combined. Lumpy batter is actually preferred for pancakes- it makes them fluffier.
- Add a little vegan butter in the pan, scoop 1/4 cup of the batter in and let it cook for 2.5 to 3 min per side on low to medium flame.
- Serve it with maple syrup or any fruit toppings of your choice. Enjoy 🙂
