Hey guys, so a few days back I made these jam filled muffins. These are eggless and still very spongy. Also, they’re quite easy to make, don’t involve any tough chore.

Ingredients: {Makes 4 muffins}
For the Vanilla Muffins–
- All purpose flour- 1/2 cup
- Curd (thick)- 1/4 cup
- Powdered sugar- 1/2 cup –> Can reduce 2 tbsp if you don’t like your muffins to be too sweet
- Baking soda- 1/4 tsp
- Baking powder- 1/2 tsp
- Oil- 2 tbsp
- Vanilla essence- 3/4 tsp
For the Filling–
- Any red coloured jam– 2 tbsp (I used mixed fruit jam)
Method:
- Take a bowl, add in curd and powdered sugar. Mix well until the sugar is totally dissolved. Then, add in baking soda and baking powder. Whisk it and let it sit for 10 minutes so that the baking soda and curd start reacting which would make the muffins very spongy.
- Meanwhile, preheat the oven to 180°C and grease the cupcake mould. I used a silicon mould.
- Then, take a sieve and sift in flour in the curd mixture, then start whisking the flour and the curd very gently, making sure that you don’t deflate the air and frothiness we created in the curd.
- After whisking a little (just whisk to make sure the flour is starting to combine), switch to spatula and fold the flour in to create a smooth batter.
- After you’ve formed a smooth batter, add the batter in the cupcake mould with the help of an ice cream scoop, filling approx. 1+1/2 scoop of batter in each mould.
- Bake them for 20 to 24 minutes or until toothpick inserted in the centre comes out clean. Then, let them cool for 15 minutes before un-moulding and after un-moulding, let them cool for another 10 minutes.
- Take jam in soften it with a spoon, then microwave it for 10 seconds and smoothen it with a spoon until it is runny in consistency.
- Then take a small heart shaped cookie cutter and place it in the centre of the muffin. With a knife, loosen the edges of the heart (watch the above video to get a better understanding) and then push the cookie cutter into the muffin and remove the cake from the heart area to create a hollow.
- Fill in the hollow with the jam and perfect the heart shape of the jam with a toothpick. (It would all make sense once you watch the video, I promise)
- Sprinkle some powdered sugar over the top and then swirl a toothpick in the jam area so that the sugar dissolves in the jam and we can see a perfect red heart and not a powdered sugar white heart.
- Now, your jam filled muffins are ready to be served.
