This is the easiest blueberry mug cake recipe. It is so simple and takes hardly any time. But, the end result is no doubt, very delicious. The best part is that it is made in a microwave.
Mug cakes are my favourite because you can eat the whole thing by yourself and they take just 2 minutes. Also, you can always experiment with different flavours. So, this saturday I made myself a blueberry mug cake to fulfill my cake cravings. I had some frozen blueberries in my fridge which were lying as it is for a month and I didn’t want to waste the whole pack.

To be honest, it is a real struggle to find fresh blueberries and raspberries in India. You do get them at some places only, and I don’t know which these “some” places are. We can easily find canned blueberries but fresh are always better than canned/ frozen.
Luckily, I saw these frozen blueberries at a local store and grabbed them asap! I would also try blueberry cheesecake real soon. For now, here’s the recipe-
Ingredients-
- Flour- 2 tbsp
- Powdered sugar- 1 tbsp
- Sweetened condensed milk- 1 tbsp
- Blueberries- 6 to 8
- Vanilla extract- 1/4 tsp
- Vegetable oil/ olive oil- 1 tbsp
- Milk- 2 tbsp
- Baking soda- 1/4 tsp
- Baking powder- 1/4 tsp
Method-
- Take your favourite mug (microwave safe) and add in flour and condensed milk. Then, mix them well with a fork. After that, add in the oil and vanilla extract and whisk well. Add sugar, milk, baking soda and baking powder and combine it well to form a smooth batter.
- Then, add the blueberries and give a gentle stir to it. Bake it in the microwave for 1.30 minutes on the highest power level of your microwave. Poke it with a toothpick to check whether it’s done or not. If not, bake for another 10 seconds or so.
- Serve hot/ cold with some blueberries on top. You could also serve it hot with some chilled vanilla ice cream on the top.
