I’ve not posted even a single recipe since the last two weeks and I have a valid reason for that. I have been thinking of starting my YouTube channel for the longest time ever. My old laptop stopped suddenly one day and I had to buy another one. So, that lost me about 6 dessert recipes :'( It took me a while to figure out how to record a decent video with a tripod and edit videos on iMovie. I had used the Windows movie maker for some random video editing but since I switched my laptop, I had to learn everything from the start which took time.
From now on, I will be posting every recipe with a video except some very simple and basic ones with the traditional step by step clicks method.
Now, coming on to the recipe. I was craving a chocolate cake forever and not just any chocolate cake, a really chocolaty chocolate cake; this recipe is exactly what I wanted. It is super soft and moist, really easy to make, eggless and the best part- it is made in a microwave! The frosting makes it even more yummy by adding some more chocolate to it; the sweetness is perfect along with the frosting. So, if you are not planning to add the frosting, just add two extra tbsp of powdered sugar in the cake batter. Even if you don’t, the cake would still be fine.
Ingredients:
For the Chocolate Cake-
- Flour- 3/4 cup
- Powdered Sugar- 1/2 cup
- Vanilla Extract- 1/2 tsp
- Salt- 1/8 tsp
- Baking Powder- 1/4 tsp
- Baking Soda- 1/2 tsp
- Coffee Powder- 1/4 tsp
- Water- 1/4 cup
- Milk- 2 tbsp
- Curd- 1/4 cup
- Oil (I used Olive Oil)- 1/4 cup
- Cocoa Powder- 3 tbsp
For the Chocolate Frosting-
- Milk Chocolate- 35g or 6 tbsp
- Salted/ Unsalted Butter- 15g or 1 tbsp
- Cocoa Powder- 1 tsp
- Heavy Cream- 2 tbsp
Method:
For the Cake-
- Start by preheating the microwave at 180°C. Take a mixing bowl and add in curd and oil. Whisk them well until they are combined. Take the water and add in coffee powder, dissolve it in and then microwave it for a minute. Keep it aside.
- Then, sift in flour, salt, baking soda, baking powder, powdered sugar and cocoa powder through a sift and whisk the ingredients well with the curd mixture.
- After giving the ingredients a gentle whisk, add in the coffee mixture. Whisk it a little and add milk to it. Now, combine everything well and whisk it to form a smooth batter.
- Grease a microwave safe cake pan and place a parchment/ baking paper on it. Grease the top of the parchment paper too.
- Pour in the batter and bake it for 30 to 32 minutes. After it is baked, let it rest inside the warm microwave for about 15 minutes. Then, take out the cake and loosen the edges with a knife. Transfer the cake to a cake turn table.
- Peel off the parchment paper from the cake.
For the Frosting-
- Take the chocolate and butter in a bowl and microwave it in intervals of 30 seconds until they are melted. Stir the chocolate and butter constantly after heating; stirring is more important than heating for melting the chocolate. Add in the cream, mix it well and microwave for another 30 seconds. Chill them for 15 minutes in the fridge.
- Now, take the cake and make tiny little holes in it with a fork, these holes will help absorb the fat content from the frosting and will help the cake stay moist for long.
- After the frosting is chilled, add in cocoa powder and stir again. Pour the frosting over the cake and even it on the top; let the excess drip off the edges.
- Chill it for 10 to 15 minutes before slicing. Sprinkle some powdered sugar and top it off with some mint leaves to make it look fancy.

Hey Punna, I'm not sure about the normal microwave settings. I can only assure of this recipe working in convection mode, otg or on stove.

For how long do I need to keep it on the stove?

30 to 32 minutes on the stove as well, check it after 30 minutes by inserting a toothpick and if it's still not done, you can keep it in for a few more minutes
