Heyaaa! I am back with another recipe- this time it’s watermelon cupcakes because I thought of making something summer themed.
I used the very basic vanilla cupcakes for this, frosted with American vanilla buttercream and topped with some chocolate chips. Also, this was my first time having some American buttercream and probably the last time too because it is just too sweet for my liking. I will be sticking to my good old whipped cream frosting or swiss meringue buttercream for cakes and cupcakes. So, if you’re not a fan of American buttercream or just cannot handle too much sweet, just switch it with any frosting you prefer and the result would be as good.

Ingredients: (Makes- 4 cupcakes)
For the Vanilla Cupcake:
- All purpose flour- 6 tbsp
- Powdered sugar- 1/4 cup
- Salted butter- 1/4 cup (Add a pinch of salt if you’re using unsalted butter)
- Vanilla extract- 3/4 tsp
- Egg- 1
- Baking powder- 1/3 tsp
- Baking soda- 1/6 tsp
- Green food colour
For the Vanilla Buttercream:
- Unsalted butter- 4 tbsp
- Vanilla extract- 1/2 tsp
- Powdered sugar- 1 cup (sifted)
- Milk- 2 tsp to 3 tsp
- Red food colour (I used tomato red + raspberry red)
For Decoration:
- Chocolate Chips- 2 tbsp
Method to make watermelon themed cupcakes:
- Preheat the oven to 180C and grease a cupcake tray with some oil or butter.
- Take a sieve and sift in flour, baking powder and baking soda. Give it a whisk and set the dry ingredients aside.
- Crack an egg and beat it; set it aside. In a separate bowl, cream together butter and sugar. Then add in the beaten egg and mix it well. Then, add in vanilla extract.
- Now, add in the dry ingredients little by little in 3 to 4 batches while folding the batter in with a spatula.
- After you’ve formed a smooth batter, add the green food colour until you get the desired shade of green. Transfer the batter to the cupcake moulds and bake for 30 to 40 minutes or until a toothpick inserted comes out clean.
- Let the cupcakes cool to room temperature once they’re baked.
- Meanwhile, prepare the frosting by taking unsalted butter and creaming it. Then, add in sugar, 1/4 cup at a time and whisk it well. Then, add in vanilla extract and milk and give it a whisk.
- Then add in red food colour to get the desired shade of red.
- Transfer the frosting to a piping bag and cut a medium sized hole in the bag. Frost the cupcakes and sprinkle some chocolate chips on the top.
- Your watermelon themed cupcakes are ready to be eaten! 🍉
