I tried this sandwich yesterday morning. This tomato and corn sandwich recipe came out as a result of a half- empty fridge. There was literally nothing in the fridge that morning. I had a bread loaf and a few veggies and none of them were good to go in a sandwich. So, I thought of making a tomato and corn sandwich even though I HATE eating tomatoes as it is. This goes good with a glass of fresh lime soda. Basically, it could make that perfect lazy day breakfast which is wayyyyyy better than plain cornflakes/ oatmeal or bread butter.

I actually have loads of recipes ready to post but I’m lazy to write blog posts, transfer photos to my laptop and all those techie stuff. But, I try not to procrastinate now. Now, let’s get into this recipe.
Ingredients:
- Bread slices- 2
- Tomato- 1 finely sliced
- Onion- 1 small finely chopped
- Lemon juice- 1 tbsp
- Coriander leaves- 4 to 5
- Mint leaves- 4 to 5
- Cheese slice/ grated cheese
- Fresh Corns- 2 tbsp
- Tabasco sauce
- Salt & Pepper
- Tomato Ketchup
- Garlic butter/ normal salted butter
Method:
- Take the sliced tomatoes (make sure you’ve removed all the seeds from it) and roast it on a hot pan and drizzle some olive oil over it. Flip the slices and add onions to the pan. Then, add corns, salt and pepper. Stir everything well. Add crushed mint and coriander leaves. Then, drizzle some lemon juice and mix the stuffing well.
- Take the bread slices and spread melted butter on them. Add the stuffing to one of the slice and put a cheese slice on the top. Cover it with another bread slice and grill/ toast it for a couple minutes.
- Your tomato & corn sandwich is ready! Serve with some Tabasco sauce mixed with the normal tomato ketchup. The flavour of tabasco sauce mixed with tomato ketchup goes so well with this sandwich. If you don’t have tabasco sauce, try adding pickles to this sandwich. They would give the same flavour.
