Start your day with a healthy yet scrumptious breakfast- vegan cinnamon blueberries oatmeal recipe
Summer is here and it’s getting warm here where I live with frequent rain and I have been absolutely loving having breakfast by the window watching the raindrops race down. I have been moving a lot too so oatmeal is my go-to breakfast these days.
It is vegan, healthy, delicious and so filling. So, I am sharing one of my favorite oatmeal recipes today- that too a microwave one that is INSTANT! It is such a filling oatmeal recipe.
Blueberry oatmeal in just 2 minutes? How freakin’ cool is that?! And no, none of that instant sugary crap. This is actually healthy with no added sugar but it’s still sweet and absolutely decadent.
Also, apart from being super easy to make, it’s also quite frugal considering we’re using rolled oats which are super cheap. I used Quaker Oats here and unsalted creamy peanut butter. Although chia seeds are optional in this recipe, I recommend adding those since they make this recipe more filling because of how fibrous they are.
Ingredients for Blueberry Oatmeal:
- 1/2 cup rolled oats
- 1/2 tsp cinnamon
- 1/2 tsp vanilla
- 2/3 cup milk of choice
- 1/4 cup blueberries
- 1 tbsp peanut butter
- 1- 1.5 tbsp honey (can substitute with agave syrup)
- 1 tsp chia seeds (optional)
Instructions to make Blueberry Oatmeal in Microwave:
- Add the rolled oats, cinnamon, vanilla, and milk to a microwave-safe bowl and stir. Feel free to substitute milk with water. Microwave on high for 2 minutes to 2 minutes & 20 seconds. Keep an eye on it so that the milk doesn’t overflow or the oatmeal doesn’t get too thick. Take it out and stir well.
- Add blueberries, peanut butter, chia seeds, and honey on the top. Enjoy!
